Preheat oven to 350° F
Beat together butter and monk fruit sweetener.
Add vanilla and eggs. Mix until incorporated.
Mix in remaining ingredients with hand mixer. Fold in chocolate chips if using.
Scoop out onto lined baking sheet.
Bake for 8-12 mins until edges start to brown.
Allow to cool on baking pan. They will be soft when you take the out. Once cooled, they will be easy to pick up without breaking.
