Weeknight dinners can be stressful. This quick and easy jambalaya is made in one pan, so its easy to cook and easy to clean up after!

Ingredients:
3 bell peppers large chop
1 12oz bag frozen cauliflower rice
14 oz diced canned tomatos
Cajun Seasoning to taste
14 oz pork kielbasa sliced
1 T avocado oil
Directions:
- Heat avocado oil in cast iron pan over medium high heat.
 - Add sliced kielbasa and cook until browned.  Flip and cook the other side.  Remove from pan.

 - Into the same pan, add the bell peppers and sauté until they start to soften.
 - Add bag of frozen cauliflower rice and continue to cook until warmed through.
 - Pour tomatoes into pan and mix.
 - Cajun seasoning adds the spice. Add in small amounts and taste until it meets your desired spice level.
 - Add kielbasa back in and bring back to temp.
 - Enjoy!
