Christmas cookies are a tradition in so many families. Our family makes the most beautiful Santa cookies (which I did indulge in), but I wanted something for all those Christmas get togethers that are loaded with frosted cut outs.  While the frosting is in need of perfecting at the time of this post, the cut out base was too good not to share as soon as possible.

Ingredients:

  • 1 Stick Butter
  • 3 oz Cream Cheese
  • 2 Cups Powdered Erythritol (I love this brand: So Nurished)
  • 1 T Heavy Whipping Cream
  • 1 T Vanilla
  • 6 Eggs
  • 1/2 t Salt
  • 1 t Baking Soda
  • 4T Beef Gelatin
  • 2t Cream of Tartar
  • 2/3 Cup Coconut Flour
  • 3 Cups Almond Flour 

Directions:

  1. Cream together butter, cream cheese, heavy cream, vanilla, and powdered sugar. 
  2. Add eggs one at a time until incorporated. 
  3. In seperate bowl, mix remaining ingredients together.
  4. Add dry ingredients to wet.
  5. Once combined, wrap in cling wrap and chill for 2 hours in the fridge. This is very important! It allows the gelatin to firm up and helps the cookies hold shape.
  6. Roll dough between two pieces of parchment paper to desired cookie thickness.  Thinner for crispier cookies, and thicker for chewy soft cookies.  I rolled mine between 1/4 and 1/2 inch to have that chewy sugar cookie cut out texture.
  7. Cut out desired shapes and transfer to cookie sheet.  I like to line mine with parchment for easy clean up 🙂 
  8. Bake at 350 until edges are lightly browned.  Time will depend on thickness.  Mine were between 12-15 mins.
  9. Allow to cool before frosting.
