Weeknight dinners can be stressful.  This quick and easy jambalaya is made in one pan, so its easy to cook and easy to clean up after!

Ingredients:

3 bell peppers large chop

1 12oz bag frozen cauliflower rice

14 oz diced canned tomatos

Cajun Seasoning to taste

14 oz pork kielbasa sliced

1 T avocado oil

Directions:

  1. Heat avocado oil in cast iron pan over medium high heat.
  2. Add sliced kielbasa and cook until browned.  Flip and cook the other side.  Remove from pan.
  3. Into the same pan, add the bell peppers and sauté until they start to soften.
  4. Add bag of frozen cauliflower rice and continue to cook until warmed through.
  5. Pour tomatoes into pan and mix.
  6. Cajun seasoning adds the spice.  Add in small amounts and taste until it meets your desired spice level.
  7. Add kielbasa back in and bring back to temp.
  8. Enjoy!
