We often get stuck in a routine of: chicken, beef, pork.  While that isn’t a terrible thing, it is nice to have some extra variety and add fish to the menu occasionally.  Salmon is especially great because it is rich in Omega-3 Fatty Acids and a good source of potassium. These quick and easy salmon cakes can literally be thrown together in no time, and I can promise you they will be devoured just as fast!

Ingredients:

  • 2 Cans of Flake Salmon
  • 1 Red Bell Pepper Finely Diced
  • 4 Eggs
  • 3 Stalks of Green Onion Sliced
  • 1 cup of Crushed Pork Rinds
  • 2 Tbsp Butter or Avocado Oil

Directions:

  1.  Mix all ingredients together.
  2. Heat Avocado Oil or Butter in cast iron or non stick pan over medium to medium high heat.
  3. Form mixture into patties.
  4. Fry on each side until golden brown crust forms.
  5. Serve immediately.
