We often get stuck in a routine of: chicken, beef, pork. While that isn’t a terrible thing, it is nice to have some extra variety and add fish to the menu occasionally. Salmon is especially great because it is rich in Omega-3 Fatty Acids and a good source of potassium. These quick and easy salmon cakes can literally be thrown together in no time, and I can promise you they will be devoured just as fast!

Ingredients:
2 Cans of Flake Salmon
1 Red Bell Pepper Finely Diced
4 Eggs
3 Stalks of Green Onion Sliced
1 cup of Crushed Pork Rinds
2 Tbsp Butter or Avocado Oil
Directions:
Mix all ingredients together.
Heat Avocado Oil or Butter in cast iron or non stick pan over medium to medium high heat.
