Winter calls for stick to your ribs food. This spaghetti squash casserole is just that. Layers of creamy cheese, meat, and pasta sauce will make you and everyone else at the table happily join the clean plate club.

Ingredients:

  • 1 Medium Spaghetti Squash
  • Olive Oil
  • 2 T Italian Seasoning
  • 1 Pound Ground Beef or Ground Pork Sausage
  • 24 oz Marinara Sauce (Find one with no added sugar!)
  • 1 8oz package of Cream Cheese cut into cubes
  • 2/3 Cup Sour Cream
  • 2 Cups Shredded Mozzarella Cheese

Directions:

  1. Preheat oven to 400*
  2. Slice spaghetti squash in half lengthwise and remove seeds. Drizzle cut side with olive oil and cover with Italian seasoning. Place cut side down on a baking sheet and bake for 45 mins or until a fork can pierce through skin.
  3. While the spaghetti squash bakes, brown ground beef or pork sausage.
  4. Once baked, scrape out squash into 9×13 glass pan. Top with cream cheese and sour cream. Layer on beef, and top with marinara sauce.
  5. Bake for 20 mins.
  6. Top with cheese and place under broiler until just slightly browned.
  7. Allow to sit for 5-10 minutes to set before enjoying.

    My two cups of mozzarella didn’t cover nearly as well as your picture shows but I didn’t add more because it has enough carbs as written. Haven’t tasted yet as it cooling but I’m sure it’s delish!

      Sheila- You’ll have to let me know what you think once you taste it. The sauce and the squash make it more carbs than we typically do in a meal, but still way better than regular spaghetti!!
