Tator tots are a midwest must have, but potatoes are a keto no-go. I couldn’t contain my excitement when I came across this recipe.  With a few tweaks, it was perfect.  They are a great side dish for your bunless burger.

I recommend making extra as they are great to freeze! Once baked and cooled, store in a ziplock bag.  Using an air fryer: cook at 350* for 5 mins or until warmed through.  Great for easy weeknight meals for the kids especially when pared with my kid approved chicken nuggets.

Cauliflower Tots

Ingredients:

  • 1 bag cauliflower rice (Highly recommend the steam in the bag kind to save time and sanity!)
  • 2 eggs
  • 1 cup parmesan
  • 1-2 tsp Trader Joe’s onion salt
  • dash of cayenne pepper (optional)
  • 2 Tbsp butter

Directions:

    1. Preheat oven to 450º F.  If convection is an option, set convection bake 425º F. I find that by using convection I get better browning.
    2. Cook cauliflower rice according to package instructions.

    4. Mix together: eggs, onion salt, parmesan, cayenne, and butter in a bowl.  This helps to absorb some of the liquid of the eggs and helps the tots keep their shape.
    5. Once cauliflower has finished, mix it into the egg mixture.
    6. Using a cookie scoop, divide up the mixture into tots on a baking sheet lined with parchment paper or silicon liners.
    7. Bake for 15-20 or until the outside has turned to a golden brown.

    We will split this recipe into 4 servings. Cauliflower rice is pretty easy to find: Walmart, aldi, Trader Joe’s all have it in the frozen section.

      What kind of parmesan cheese? I have shredded parmesan, will that work?

    I made these and used my regular onion salt. I kept checking recipe and it said 1-2 Tbsp. I used 1 Tbsp and holy salt moly! If you are not using Trader Joe’s. 1 tsp of onion salt is plenty!! I will try these again with less salt. We don’t have a Trader Joe’s where I live.
