Cut out Cookies

Christmas cookies are a tradition in so many families. Our family makes the most beautiful Santa cookies (which I did indulge in), but I wanted something for all those Christmas get togethers that are loaded with frosted cut outs.  While the frosting is in need of perfecting at the time of this post, the cut out base was too good not to share as soon as possible.

Peanut Butter Chocolate Chip Cookies

Holidays around our family mean peanut butter blossom cookies.  You know the ones: peanut butter cookie with a chocolate kiss or star in the middle. To avoid the temptation, I needed to find a replacement recipe that would allow me to have the flavor of my favorite holiday cookie without throwing myself out of ketosis. Mission accomplished with this chewy peanut butter chocolate chip cookie recipe.

Jalapeño Lemon Chicken Thighs

For my birthday, we visited a locally owned place that is one of those places you visit only on fancy occasions without kids.  Mike ordered the most amazing chicken thighs. “CHICKEN THIGHS?!” I thought. He complains when I make them at home, so I was SHOCKED he ordered them for a special occasion dinner. He had taken the waitress up on her recommendation, and I’m so glad he did!

They were citrusy, but with spice from the jalapeños.  I’m sure their method was MUCH more complicated than mine, but I don’t have time for that! These turned out so delicious, tender, and flavorful.  They will be on the menu at home more often!

Twice Baked Cauliflower

Fall used to be a hard time for me when “dieting.” Warm gooey comfort food calls my name, and luckily for me, keto makes that totally possible!

This twice baked cauliflower is a perfect side dish for your comfort food meal. The recipe can easily be modified to add your favorite potato toppings (bacon, cheese, chives, sour cream, etc).

Salmon Cakes

We often get stuck in a routine of: chicken, beef, pork.  While that isn’t a terrible thing, it is nice to have some extra variety and add fish to the menu occasionally.  Salmon is especially great because it is rich in Omega-3 Fatty Acids and a good source of potassium. These quick and easy salmon cakes can literally be thrown together in no time, and I can promise you they will be devoured just as fast!

Keto Chow

Puppy chow isn’t for puppies, but keto chow is for keto followers.  Puppy chow is the perfect combo of sweet and crunchy, and this version doesn’t disappoint.  In fact, the little extra saltiness in this makes me like it almost MORE than the original.  It was a great test of willpower for me to walk away and not eat the entire bowl!

My Egg Roll in a Bowl

Egg Roll in a Bowl was one of the first low carb meals I made.  There are tons of different recipes out there for it, but I found ways to make it more convenient  to throw together during the week on busy nights.  Whenever we make this, I make a double batch.  We end up eating it multiple times in the week, and I like it even better the next day after the flavors have mingled in the fridge.

Easy Mason Jar Blue Cheese Dressing

One of the biggest misconceptions of keto is that you only eat bacon, butter, and cheese.  In reality, we add a salad to dinner almost nightly, and this easy blue cheese dressing is the perfect way to add extra fat and flavor.  It can be quickly mixed up with minimal dishes and stores great in the fridge for the week making it a great item to add to your weekly meal prep.  Tastes so great you’ll be looking forward to your nightly greens (or make you crave some buffalo wings)!
