Fall used to be a hard time for me when “dieting.” Warm gooey comfort food calls my name, and luckily for me, keto makes that totally possible!
This twice baked cauliflower is a perfect side dish for your comfort food meal. The recipe can easily be modified to add your favorite potato toppings (bacon, cheese, chives, sour cream, etc).

Ingredients:
1 12 oz Bag Cauliflower (Steam in bag variety is easiest!)
1 Tbsp Sour Cream
1 Tbsp Chives (Fresh or freeze dried)
1/2 Cup Shredded Cheddar Cheese
4 oz Cream Cheese
1/4 tsp Garlic Powder
1/2 cup Parmesan
1/2 cup Crushed Pork Rinds
Directions:
- Steam cauliflower in bag until soft enough to mash with fork.
- Add in softened cream cheese. If needed, microwave cream cheese with cauliflower until it is soft.
- Blend with immersion blender or regular blender until smooth
- Mix in: Garlic powder, chives, sour cream, and cheddar.
- Move mixture into oven safe dish.
- Mix parmesan and crushed pork rinds together
- Top the cauliflower mixture with pork rind mix.
- Broil (500*) until browned on top.
