Fall used to be a hard time for me when “dieting.” Warm gooey comfort food calls my name, and luckily for me, keto makes that totally possible!

This twice baked cauliflower is a perfect side dish for your comfort food meal. The recipe can easily be modified to add your favorite potato toppings (bacon, cheese, chives, sour cream, etc).

Ingredients:

1 12 oz Bag Cauliflower (Steam in bag variety is easiest!)

1 Tbsp Sour Cream

1 Tbsp Chives (Fresh or freeze dried)

1/2 Cup Shredded Cheddar Cheese

4 oz Cream Cheese

1/4 tsp Garlic Powder

1/2 cup Parmesan

1/2 cup Crushed Pork Rinds

Directions:

  1. Steam cauliflower in bag until soft enough to mash with fork.
  2. Add in softened cream cheese.  If needed, microwave cream cheese with cauliflower until it is soft.
  3. Blend with immersion blender or regular blender until smooth
  4. Mix in: Garlic powder, chives, sour cream, and cheddar.
  5. Move mixture into oven safe dish.
  6. Mix parmesan and crushed pork rinds together
  7. Top the cauliflower mixture with pork rind mix.
  8. Broil (500*) until browned on top.
