When Mike and I started dating almost 10 years ago, he introduced me to his favorite meal: Tator Tot Hot Dish (or TTHD as he still calls it). We haven’t had it in almost 2 years since going keto. That was until I found this new seasoning at Trader Joe’s! It was just the push I needed to create this low carb version of his favorite.

Ingredients:

  • 1 1/2 Pounds Ground Beef
  • 2 Cups Green Beans
  • 2 batches of Cauliflower Tots- Recipe Found HERE
  • 2 Cups Bone Broth
  • 1 T Umami Seasoning Blend: Found at Trader Joe’s or HERE
  • 1/4 Cup Heavy Whipping Cream
  • 2 oz Cream Cheese
  • 1/4 tsp Beef Gelatin
  • 1/4 tsp Xanthun Gum

Directions:

  1. Preheat oven to 350º F
  2. Brown beef in oven safe pan.
  3. In separate pot, bring bone broth to boil. Add Umami seasoning, Cream Cheese and heavy whipping cream. Simmer for 15 mins.
  4. Add green beans to beef pan and allow to cook on low. They will not get cooked through, but they will finish in the oven.
  5. While whisking, add in beef gelatin and xanthun gum to the broth pot. You may want to add more if you like a thicker “soup.” Keep in mind that too much xanthun will give a gummy texture. Add more gelatin first and in small amounts.
  6. Add “soup” to beef and green beans and stir together.
  7. Top with cauliflower tots.
  8. Bake for 10-15 mins.
  9. Enjoy!

NOTE: This was one batch of tots. Two should give full coverage of the top of the hot dish.
