Keto French Toast Loaf

If you’ve been around the keto world (especially on Instagram), you’ve seen, heard, and maybe even made egg loaf. I have made it a million times, and I wanted to share what has become our family’s favorite version. Easy, quick, great for meal planning, and kid approved. We enjoy this for easy breakfast during the week and sometimes as a great dessert. Just pair with sugar-free syrup and homemade whipped cream!
This recipe makes 18 servings using THIS pan for easy single serve portions to grab and heat up. Alternatively, you could use a muffin pan. Fill up 1/2 way in the muffin pan as to not overfill and end up with a mess in your oven!

Cauliflower Tot Hot Dish

When Mike and I started dating almost 10 years ago, he introduced me to his favorite meal: Tator Tot Hot Dish (or TTHD as he still calls it). We haven’t had it in almost 2 years since going keto. That was until I found this new seasoning at Trader Joe’s! It was just the push I needed to create this low carb version of his favorite.

Breakfast Pizza

There is pizza for breakfast and there’s breakfast pizza. Weekends used to involve a trip to the gas station to pick up a slice of loaded breakfast pizza. The chewy crust, thick gravy like sauce, and all the greasy toppings made my weekend. I whipped up this keto version, and SCORE-Mike liked it even better

Keto Breadsticks

With so many good keto sauces, you need a good keto breadstick to help you get ever last drop. These fluffy breadsticks were a HIT at our house with both the kids and adults. Everyone was going back for more. At 2g net carb, you can enjoy more than one.

Vanilla Fat Bomb Ice Cream

Sometimes you just need classic creamy vanilla ice cream! Store bought low carb ice creams just can’t match the creamy texture this recipe provides. Pair with my peanut butter chocolate chip cookies (found here) for a great keto ice cream sandwich or serve with my brownie avocado cookies (here) for a brownie ala mode.

Cut out Cookies

Christmas cookies are a tradition in so many families. Our family makes the most beautiful Santa cookies (which I did indulge in), but I wanted something for all those Christmas get togethers that are loaded with frosted cut outs.  While the frosting is in need of perfecting at the time of this post, the cut out base was too good not to share as soon as possible.
